Rhubarb Schnapps -

Also in my new Nigella Lawson baking book I cam across this intruiging recipe calld Rhubarb Schnapps, Recipe is below:

Approx. 1Kg of rhubarb, to
  make 600g trimmed weight
300g Caster sugar
1 litre vodka, plus more if needed
1x 2 itre jar
1x 1 litre bottle

Chop the rhubarb & divide between the 2 jars. Add 150grams sugar to each jar, put the lids on and shake well. Unclip the lids and pour 500ml of vodka - and I use the chepest i can find - into each and fill. if that doesn’t fill them, then fill with more.But it should though,the rhubarb takes up a lot of room in the jar.

Close the lids, put the rhubarb somewhere cool and darkfort at least 6 wks up to 6 months.if you remember, shake the jars everyday or every other day for the first month so.

Strain into a jug, then pour into a bottle.there’s your rhubarb schnapps. makes 1 Litre.

This sounds delicious, I love rhubarb.. but will it be as yummy as Skittles vodka?? That’s my favourite vodka , but I could be tempted to try wink

ohhhh never heard of skittles schnapps, sounds interesting too.

Ooo….sounds nice.  I make sloe and bullace gin/vodka so this one sounds like another one to try! One rhubarb crown in the garden supplies MORE than enough for many crumbles so something else to make with it would be good….
