Mmm i like the sound of the banana millionaires shortbread, did you take notes GeorgeBee? would love to try that,
Carolyn thats what i thought a good way of using up old bananas, as they do turn quite quick some times.
I will check the BBC recipes out too in a bit.

Dates, honey and carrot cake sounds gorgeous!!

I have put some of my fav recipes onto cards - in a quick short version and I had done this one:

Carrot and Fruit Cake
Put all of this lot in a bowl and pop in the microwave
125g - 4oz soft brown sugar
6 tablespoons of clear honey (although I reckon set will do)
175g - 6oz of grated carrot
125g - 4oz seedless raisins
50g - 2oz chopped dates
3/4 teaspoon of ground nutmeg
125g - 4oz butter
150ml - ΒΌ pint water

and bring to the boil - then simmer for 5 mins, leave to cool

then add:
1 beaten egg
and then mix together thoroughly:
125g - 4oz wholemeal flour
125g - 4oz plain flour (can use all plain)
2 teaspoons baking powder

put the mix in a 23cm (9inch) cake tin and bake for 55 - 60 mins - 180c/350f/gas mark 4

so if it is a bit brief and you don’t understand it - give me a shout and I will get the book out.

i often make carrot cake, but will give that one a go.
Does anyone no of a way to stop your hands from going orange? from grating a carrot?

No smile - apart from wearing gloves.  The last few carrots I had from my veg box I just scrubbed and grated so they weren’t so orange.

This cake is different to the ‘normal’ carrot cake - it has a different texture

Thanks for the recipe carolyn - I will have to try that out!! Although I hate grating carrots, so time consuming and always end up with stained nails!!

I’ve just made my honey cake, just cooling, then I will try to remember to take a pic!
