Hi all,

National Vegetarian week takes place from May 24th - 30th so we thought we’d celebrate with a veggie themed challenge! Simply make any crafty make with a vegetable theme and post it in reply to this thread to enter - you can even enter pics of your favourite veggie recipes, just as long as you post the recipe alongside. We’ll be giving the lucky winner a year’s subcription to the fab Cook Vegetarian magazine, and there will be a runner up prize too!

All entries must be posted by 5.30pm (UK time) on the 30th May. Only one entry per member please. Good luck to everyone who enters - can’t wait to see what you come up with!

This is definitely right up my street!!!!! Now I’ve just got to decide what to enter! I’ve 101 of my own veggie/vegan recipes, or will I make something? Decisions decisions!!!

Great challange Kate. I haven’t eaten any meat or fish for 5 weeks now. The last time was salmon on Good Friday. So I have been experimenting a lot lately,kinda sick of cheese now LOL.So I think I may give this challange a go too. Good luck everyone

I’ve finally got my photos sorted! So here is my entry!

It’s a veggie/vegan BBQ!!!

I’ve made a menu and a recipe card and formed them into a mini book. I’ve then cooked everything on the menu and photographed the end result!

In case you can’t read the menu, we had

Mushrooms stuffed with vegan pesto and vegan parmesan
Tofu and hazelnut cutlets
Warm ciabatta bread
Humous and Salsa
Sweet potatos basted in garlic oil
Cous cous salad with apples, red peppers, sultanas and cashew nuts
Pasta salad with kidney beans, musrooms,walnuts and sweetcorn.

Followed by rhubard crumble with soya icecream amd soya custard!

All washed down with a bottle of fizz!

I’ll have to split the pics between two posts…
